There are sandwiches, and then there are grilled sandwiches. A regular sandwich gets the job done. It keeps you alive. It gives deli meat somewhere to live. Maybe there’s a respectable slice of cheese involved. Nobody’s mad about it. But then somebody puts that sandwich on a hot grill. Suddenly the bread is toasted and buttery. The cheese is escaping out the sides. The meat is hot. The sauce is bubbling. There are crispy little cheese bits stuck to the grill that technically belong to the sandwich but mysteriously disappear before anything reaches the table.

There is a very specific fantasy version of hosting a backyard BBQ. You casually toss a few burgers on the grill. Everyone lounges around with cold drinks. Music plays. The sun shines. You effortlessly produce an incredible meal while simultaneously enjoying fascinating conversations with all of your guests. Then there's reality.
There is something about steak that automatically makes dinner feel like an occasion. Put a steak on a plate next to a baked potato and suddenly Tuesday night has reservations. The best part? Steak doesn't actually need much help. You don't need a complicated marinade with seventeen ingredients. You don't need a culinary degree. And you definitely don't need to spend half the evening preparing a sauce that requires constant whisking while everyone else is outside enjoying themselves.
You don't have to make everything from scratch. Sure, homemade barbecue sauce is fantastic. Fresh potato salad is amazing. Hand-cut fries are impressive. But if you're juggling a grill, entertaining guests, chasing kids, refilling drinks, and trying not to turn your burgers into hockey pucks, shortcuts aren't cheating—they're survival.
The trick isn't avoiding convenience foods. The burgers have disappeared. The potato salad bowl has been scraped clean. Everyone's leaning back in their chairs, sipping a cold drink while the conversation drifts from vacation plans to old family stories. Then someone says the words every backyard host loves to hear. "Is there dessert?"
Every backyard griller has been there.
You're trying to flip burgers, keep an eye on the chicken, answer the same question for the fifth time ("Is the food almost ready?"), refill someone's drink, stop your dog from stealing a hot dog, and somehow remember which burgers are medium and which are well done. Meanwhile, everyone else seems to be relaxing. |
