Grilled chicken has a reputation.
And not a great one. Everyone’s had it—the dry, chewy, somehow flavorless piece of chicken that makes you question why you didn’t just make burgers instead. The problem isn’t the grill. It’s not even the chicken. There’s a moment at every BBQ where everything either comes together beautifully…
or completely falls apart. You’ve got burgers almost done. Chicken still raw. Someone’s asking when food will be ready. You’re flipping, checking, guessing—and suddenly nothing is timing out the way you thought it would. There are grilling nights… and then there are foil packet nights.
You know the difference. Grilling nights feel like a production—multiple dishes, constant flipping, trying to time everything just right. Hosting a backyard BBQ always starts the same way.
You’re feeling confident. Maybe even a little smug. You’ve got a plan. The fridge is stocked. The grill is ready. You’re already picturing yourself casually flipping burgers while holding a drink, laughing with everyone like some kind of backyard legend. And then… it begins. There are two kinds of grilling nights.
The ones where you plan all day, marinate everything, and turn dinner into a full-blown backyard event… …and the ones where it’s 5:42 PM, everyone’s hungry, and you’re staring at the fridge like it personally betrayed you. This post is for the second kind. |
